Waffle-tastic Recipes!

Why celebrate Waffle Day only once? With the growing pandemic, most people are working from home which makes celebrating Waffle Day all week long! Let’s put a little joy back into life with some of the most delicious waffle recipes I’ve tried! All ingredients can be found in your pantry which means you do not have to leave your house for any reason. Today we’re making Buttery Golden Waffles and Strawberry Waffles.

Buttery Golden Waffles

Ingredients needed:

2 cups of all-purpose flour (or Almond flour works great too!)

3 tablespoons of granulated sugar

4 teaspoons of baking powder

Salt (to taste)

1 ¾ cup of buttermilk

2 eggs

½ cup of Kelapo Ghee (melted)

3 teaspoons of vanilla extract

Kelapo Ghee Non-Stick Cooking Spray

Make sure to heat the waffle iron before and grease with Kelapo Ghee Spray before diving into the ingredients. In a large bowl, add in the flour, sugar, baking powder and salt then continuously whisk until ingredients mixed. In that same bowl, make a hole in the center and pour in the buttermilk, eggs, Kelapo Ghee and vanilla extract. Using the same whisk, combine all the ingredients until fully mixed. Make sure not to over-mix. Let the waffle batter rest for a couple of minutes. Next, place the batter on the waffle iron and make your perfect butter waffles! Serve immediately with your choice of maple syrup!

Strawberry Waffles

Ingredients needed:

2 cups of all-purpose flour

2 tablespoons of brown sugar

2 tablespoons of white sugar

4 teaspoons of baking powder

½ teaspoon of cinnamon

¼ teaspoon of salt

1 ¾ cup of almond milk (or regular milk is fine)

½ cup of Kelapo Coconut Oil or Kelapo Ghee

1 teaspoon of vanilla extract

2 eggs (separated)

1 cup of chopped strawberries

Kelapo Ghee Non-Stick Cooking Spray (or Kelapo Coconut Oil Spray!)

Preheat the waffle iron and grease with Kelapo Ghee or Coconut Oil Spray. In a large bowl, add the flour, brown sugar, white sugar, baking powder, cinnamon, and salt then whisk together until mixed. Next, add in the almond milk, Kelapo Coconut Oil, vanilla extract, and already beaten eggs in with the dry ingredients then beat until smooth. In a separate bowl, beat the egg whites until soft peaks form. Next, fold the egg whites into the waffle batter. Add in the chopped strawberries and also fold into batter. Let the batter rest for a couple of minutes, then pour batter into the waffle iron. Use all the batter and serve waffles immediately. Add whipped cream and fresh chopped strawberries on top. Enjoy!
