Guilt-Free Strawberry Banana Muffins

In honor of our first Muffin-Top Monday, I’m reviewing a great workout DVD to help you all get rid of your muffin tops! I love that Brighthouse Networks has Fitness on Demand, a collection of workouts that feature anything from Jillian Michaels 30 Day Shred to Yogalates to the Crunch Gym eroticize series. Lately I’ve been completely obsessed with the Crunch Ass Abs 22 min workout. I can still feel sore muscles in the sides of my glutes after 2 days, so I know it’s working! I think it comes from the series of curtsy squats, which don’t really feel that hard when you are doing them. My favorite kind of workout!

A warning: Michelle Opperman, the fitness instructor in this one, is awfully peppy. I enjoy knocking this out first thing in the morning, but if you aren’t a morning person, like I am, you might want to reconsider this one. Even on my best days I still want to kick the people on the screen who bear huge smiles while doing the most excruciating of exercises.

 

On the plus side, now that we’ve worked out, we can eat carbs, guilt-free! Here’s one of my favorite coconut oil recipes for breakfast muffins:

Whole-Wheat Banana Strawberry Muffins

Ingredients

  • 2 eggs
  • 1/2 cup unsweetened applesauce
  • 1/4 cup Kelapo Coconut Oil
  • 3/4 cup packed brown sugar (I used 1/2 cup)
  • 1 teaspoon vanilla extract
  • 3 bananas, mashed
  • 2 cups whole wheat flour
  • 1 teaspoon baking soda
  • 1/2 Tablespoon ground cinnamon
  • 1 cup frozen sliced strawberries

Directions

Preheat the oven to 375 degrees F (190 degrees C). Grease 12 large muffin cups, or line with paper liners.

 

In a large bowl, whisk together the eggs, applesauce, oil, brown sugar, vanilla and bananas. Combine the flour, baking soda and cinnamon.

Stir into the banana mixture until moistened. Stir in the strawberries until evenly distributed.

 

Spoon batter into muffin cups until completely filled.
Bake for 20 minutes in the preheated oven, or until the tops of the muffins spring back when pressed lightly. Cool before removing from the muffin tins.

 

Voila! An easy recipe for muffins that you can enjoy guilt-free!
