Vegetarian Three Bean Chili

 Happy World Vegetarian Day! As I have recently stated, I have changed my diet to vegetarian for personal reasons and I feel great. I do find it sometimes difficult to make vegetarian meals for the whole family because my husband hasn’t joined me in the diet change. However, I found this really easy-to-make chili using the crockpot without meat and then I can just brown some turkey for him afterwards. Typically when I make chili I add a few “secret” ingredients that really bring the dish together: cinnamon and coconut oil.

Ingredients:

2 cans petite diced tomatoes

1 can reduced sodium dark red kidney beans; drained and rinsed

1 can pinto beans; drained and rinsed

2 cans spicy chili beans

1 medium green bell pepper, chopped

1/2 medium onion, chopped

2 medium carrots, chopped

1 to 2 tablespoons Kelapo Coconut Oil

1/2 teaspoon cinnamon

1 teaspoon paprika

1 tablespoon chili powder

1 teaspoon garlic powder

Directions:

  1. Add diced tomatoes, kidney, pinto and chili beans to crockpot.
  2. Add in chopped green bell pepper, onion and carrots. Add in coconut oil. Mix thoroughly.
  3. Add spices and stir to mix through out.

    Finished Chili

  4. Place crockpot on low heat for about 5 hours or on high heat for about 2 to 3 hours.
  5. Serve with a dollop of plain Greek yogurt and cheese.

This is a great recipe to make on a Sunday and have extra for lunch for the next couple of days if you have a small family, like mine. If you have a larger family it is a cost efficient recipe and does not require a lot of effort. I also love this recipe because it is perfect for warmer weather, although it is still very hot here in Florida! If you don’t want to add the coconut oil directly to the chili dish you can saute the green pepper, onion and carrots with coconut oil beforehand, especially if you are cooking on a higher temperature for a shorter amount of time. This will help the veggies to become tender if you don’t care for too much of a crunch in your chili!
