If you’re looking for an easy, low-carb dish, this Coconut Curry Zoodle Soup is the move. Instead of using the conventional noodles in most curry dishes, in this recipe we will be using zucchini! The Kelapo coconut oil gives the coconut curry the extra umph of coconut flavor it needs. I love Tuscan Chicken but my new favorite at the moment is Tuscan Salmon. That creamy delicious sauce along with the beautifully tender salmon filets creates such an easy dish. Using Kelapo ghee gives the sauce the nice kick of flavor than traditional butter! You can serve your salmon along with your favorite veggie. Over quarantine I was obsessed with curry. What’s good about this recipe is you can swap out the protein to whatever you’d like. You can make all sorts of dishes; fish, shrimp, or whatever is in your fridge! The magic is in the curry itself; creamy, delicious, and flavorful. The coconut milk along with the Kelapo coconut oil is a wonderful pair that makes this dish addicting.
