Fried Mac and Cheese Balls

Ingredients:

  • 3 cups macaroni and cheese (refrigerated for a minimum of 4 hours)
  • 1 large beaten, egg
  • 1 cup panko breadcrumbs
  • 2 cups Kelapo ghee

Directions:

  1. Using a cookie scoop, or a large spoon, scoop out a spoonful of your refrigerated macaroni and cheese and shape into 1 1/2-inch balls.
  2. Beat a large egg into a small bowl and pour 1 cup of panko breadcrumbs into another bowl. Coat each macaroni and cheese ball with a layer of the beaten egg, then fully coat the ball with panko breadcrumbs.
  3. Once all macaroni and cheese balls are coated, heat 2 cups of Kelapo ghee into a medium saucepan over medium-high heat—should be sizzling hot. Next, carefully add a small batch of your macaroni and cheese balls to the saucepan. Fry until golden and crispy on all sides. Once fully golden, transfer the macaroni and cheese balls to a plate lined with paper towels—the paper towels will soak up excess oil. Repeat until all macaroni and cheese balls are cooked. Enjoy!
