Sundays are a good day to relax and relish in the last few moments before the hectic nature of the week begins. We found Chef Yaa Pierce using coconut oil and asked her to give Kelapo a try. Boy are we glad we did! She created these two drool-worthy recipes that are sure to be your favorite game day, or any day, go-to dish.
Chef Yaa creates some delicious dishes on Electric Foodie – which has some truly amazing vegan and vegetarian dishes. And we are so excited to share some of her newest creations with us.

How tasty do these sunflower seeds look?
Spicy Roasted Sunflower Seeds
Coat sunflower seeds with melted Kelapo Coconut Oil and Cajun spices to your taste. Then place on baking sheet and put in oven at 350 degrees for 10 minutes. Enjoy!
Sweet Potato Wedges

Easy and delicious - can you ask for more?
Slice sweet potato into bite-sized chunks. Toss in melted Kelapo Coconut Oil, paprika, cumin, Himalayan salt, black pepper and dried basil. Place in baking dish. Bake for 45 minutes at 400 degrees, or until tender.
I really can’t wait to try the sweet potatoes. Coconut oil does something magical to starches, don’t you think?
Even though we’re all resting – both of these recipes are easy to whip up and enjoy!
