Have you gotten into the Quinoa craze yet?  Quinoa, pronouced KEEN-wah, is an ancient, whole grain.  It’s recent spike in popularity is due in part to quinoa being naturally gluten-free.  Meaning, everyone who has Celiac disease or is choosing to eat a gluten-free lifestyle, can enjoy this slightly crunchy grain.  Quinoa is also a complete source of protein and a good source of fiber. I recently tried Blue Diamond’s new Bold Wasabi flavored Almonds. A delicious snack, but also the inspiration for a new recipe!   Wasabi Almond Salmon:   1 can Wasabi Almonds (6 oz) 1 can unsalted almonds (6oz) 1 egg + 1 Tbsp water mixed in a small bowl 2 salmon filets, 6-8 ounces each, (I like mine with the skin removed) 2 Tbsp Kelapo coconut oil   Put all of the almonds together in the food processor and grind into fine pieces, then pour onto a plate.
