  Happy National Papaya Month!  Actually, I just looked that up, but I love any excuse to eat this yummy tropical fruit. Honestly, this is the only recipe I have ever made with papaya, but I imagine it would make an excellent frozen sorbet. Leftover Spicy Chicken Salad

I love nothing more than using leftovers in a new, exciting way! Especially when it transforms into a much healthier lunch the next day.   My friend makes these for her kids, and swears it makes the whole house smell like yummy coconut oil!
