Fiery Fish Tacos 

Taco Tuesday is the best day, don’t you agree? Here is a delicious fish taco recipe that’s easy and fun to make. All you need is your favorite white, flaky fish (Tilapia is our fav as it soaks up all the herbs and spices), tortillas and a few toppings like corn salsa and guac. 

Homemade Baja Fish Tacos with Mango Salsa and Chips

Ingredients: 

  • 2 cups cooked corn kernels 
  • ½ cup red onion, diced 
  • 1 cup jicama, peeled and diced 
  • ½ cup red bell pepper, diced 
  • 1 cup fresh cilantro leaves, chopped 
  • 1 lime, juiced and zested 
  • 2 tablespoons cayenne pepper (or to taste) 
  • 1 tablespoon ground black pepper 
  • 2 tablespoons salt (or to taste) 
  • 6 (4 oz) fillets Tilapia 
  • 2 tablespoons Kelapo ghee 
  • 12 corn tortillas, warmed 
  • 2 tablespoons sour cream (or to taste) 

Instructions: 

  1. Preheat grill to high heat. Using a medium bowl, combine 2 cups of cooked corn kernels, ½ cup of diced red onion, 1 cup of peeled and diced jicama, ½ cups of diced red bell pepper, and 1 cup of chopped fresh cilantro leaves. Next, stir in juice and zest from 1 lime. 
  2. In a small bowl, mix together 2 tablespoons of cayenne pepper, 1 tablespoon ground black pepper, and 2 tablespoons of salt. Brush each tilapia fillet using 2 tablespoons of melted Kelapo ghee, then sprinkle with the spice mixture. 
  3. Add the fillets to the grill and cook for about 3 minutes per side. For each fish taco, top 2 corn tortillas with fish, sour cream to taste, and the corn salsa made in step 1. 
  4. Enjoy!
