Quick and Easy Easter Cupcakes


A coconut oil recipe for the perfect Easter dessert!

The frosting is made with a coconut oil recipe that uses coconut oil instead of butter for a tasty and healthy twist.







1 box GF vanilla cake mix (with all ingredients listed on box)


4 cups confectioners’ sugar, preferably organic

1/2 cup Kelapo virgin coconut oil

1 tablespoon vanilla extract

1/4 cup water

food coloring, optional

Easter candy for decorating, optional


Preheat oven, mix cupcake batter, and bake cupcakes as directed on box.

Once the cupcakes have cooled, combine the confectioners’ sugar, Kelapo virgin coconut oil, and vanilla extract in the bowl of a stand mixer. Beat on medium-high speed until combined. With the mixer running, add 1 tablespoon of water at a time, until the desired buttercream consistency. Add food coloring, if using.

Frost the cupcakes and decorate with any Easter candy you have on hand.  Don’t eat them all, save some for your guests!
