Summer Grilled Veggies

Occasionally I like to do vegan dishes to maintain a healthy diet. All the different colors and flavors make my heart (and my stomach) happy and full. Since this is a vegan dish, I use Kelapo ghee instead of butter which has dairy. Plus, it makes the veggies crisp and tasty! 

Grilled Summer Veggies

Ingredients: 

  • Kelapo ghee 
  • 1 yellow squash 
  • 1 zucchini 
  • 8 ounces cremini mushrooms, stemmed 
  • 1 small red onion 
  • 1 red bell pepper 
  • 1 green bell pepper 
  • 1 ear fresh corn, cut into 1-inch rounds 
  • Sea salt 
  • Freshly ground pepper 
  • Pesto or Greek dressing 

Instructions: 

  1. Heat a grill to medium-high and spray with non-stick cooking spray. 
  2. Cut all the vegetables into similar size chunks. Then, thread the vegetables into 4 metal skewers. 
  3. Drizzle with Kelapo ghee and season with salt and pepper. Grill the skewers for 8 minutes per side—or until the vegetables are tender. 
  4. Remove from the grill, season to taste, and serve with your desired dressing or sauce.
