Cheesy Baked Asparagus
Asparagus as a side dish to fresh fish
You didn’t realize May was National Asparagus month did you? Celebrate tonight with this easy recipe for cheesy asparagus. Thanks to my sister for sharing with me over Easter dinner last week.
Cheesy Baked Asparagus
Ingredients:
1 bunch fresh asparagus
2 tablespoons Kelapo coconut oil
1/4 cup Parmesan cheese
salt and pepper to taste
Preheat oven to 400. Line a baking sheet with aluminum foil. Place asparagus in large zip lock bag. Pour warmed coconut oil, salt and pepper into the bag with the asparagus. Note- the coconut oil must be warmed first, otherwise it won’t coat the asparagus nicely. Seal the bag and shake lightly until all the contents are mixed well. Arrange asparagus on baking sheet and cook for 12-20 minutes. Sprinkle Parmesan cheese on asparagus right before removing from oven to melt the cheese just a bit.
