
Delicious Watermelon Slices
We are all familiar with the traditional shortbread cake topped with cool whip, blueberries and strawberries for Fourth of July right? How about you make your Independence Day healthier this year! Yes, Holidays are a great excuse to indulge on your favorite sweets but why not stick to your healthy way of eating and make a dessert that is just as tasty as real cake? I bet your thinking what would you replace for this typical shortbread cake and I will replace it with watermelon.
Now you’re probably thinking that I have officially lost my mind because cake and watermelon are completely different right? Well they are but watermelon tastes amazing in the summertime and has a lot less calories. This was a lot of fun to make and really unique as well. If you want to increase the healthiness of this dessert try making our homemade, vegan cool whip made with delicious coconut oil. Don’t be thrown off by the name, it is incredibly delicious and you won’t even be able to tell the difference!
Ingredients:
1/4 of a seedless watermelon
1/2 cup blueberries

Watermelon Cake Lining
1 cup strawberries; halved
4 oz cool whip
8 x 8 inch pan
Directions:
- Slice watermelon into pieces.
- Remove slices from rind and place evenly into your pan.
- Spread cool whip on top of watermelon.
- Place blueberries in top left hand corner and place strawberries, cut side down, onto the cool whip to represent the stripes.

Watermelon Cake
There it is, a simple no-bake healthy dessert to share with your family for the Fourth of July. I like to cut the watermelon slices in half at the beginning because it makes it easier to place into your pan. I tried the vegan cool whip on top of this and it was out of this world. I honestly don’t think I would have known the difference if I hadn’t made it myself. The coconut oil gave the slightest sweet, coco-nutty taste that really complimented the fruit nicely. What will you been taking to the parties this weekend?!
